Gone But Not Forgotten

A tribute to the legends that rose to fame, won over hearts (and forks), and retired at the top of their game. From bold rule-breakers to quietly confident crowd-pleasers, these flavours earned their place in the Hall of Fame one unforgettable slice at a time.

From the crypt comes this boozy beauty – The Bailey’s Matilda. A dangerously indulgent spirit cake layered 24 times with Belgian chocolate sponge, caramelised white chocolate fudge, and a hauntingly good pour of Baileys Irish Cream.

Too smooth for this world, she vanished on a winter’s eve.

This zesty spectre of the Matilda family combined rich Belgian chocolate sponge with bold orange liqueur and silky ganache, creating a flavour that was equal parts dark and dazzling. Cointreau Matilda wasn’t shy – she was citrusy, sophisticated, and spirited in every sense.

Her zest lingers in the shadows, waiting to rise again.

Bold, brooding, and impossible to forget. This gothic beauty brought together rich chocolate sponge, sharp raspberry jam, and dark ganache in a symphony of indulgence. One for the romantics… and the revenants.

Some slices were just made to haunt you.

Fresh from the freezer and gone in a flash. This minty marvel layered cool sponge and chocolate ganache with shards of dark choc that snapped with every bite. Bold, bright, and a little too easy to devour.

Her chill never quite left the kitchen.

Fresh from the underworld of mint-choc madness, Peppermint Matilda was a chilly legend. Think 24 devilishly dark layers of Belgian chocolate sponge, peppermint ganache, and soft fudge – balanced with a swirl of white chocolate. Bold, refreshing, and just the right side of spooky. 

Don’t say her name three times or she might return.

A festive legend rolled in chocolate and magic. Whipped ganache, rich sponge, and holiday sparkle made this limited-run log the star of many tables. She vanished with the tinsel, but left behind a trail of cocoa-dusted joy.

'Tis the season to miss her, every time.

Buried deep in the freezer of forgotten pleasures lies this wicked little tub – packed with chocolate sponge, Baileys-soaked ganache, dark chocolate chips and caramel fudge. She was bold, boozy, and ready-to-devour straight from the crypt (no plate required).

RIP (Really Indulgent Pudding).

Once golden and glowing, now just a whisper of sweetness in the dark. This soft, buttery sponge was laced with caramelised white chocolate ganache and a ripple of fudge that left fans weak at the knees. A rich beauty with a short, sweet life.

Extra in the best way.

Once a winter warmer, now a ghost of comfort past. Our Hot Chocolate Matilda was a fudgy, flame-kissed tower stacked 24 layers tall with whipped ganache, cocoa-rich sponge, and toasted marshmallows. Finished with a crumble of thinly folded chocolate, she melted hearts faster than you can say “microwave for 20 seconds.”

Gone – but her gooey spirit lingers on.

Three flavours. One sweet trip down memory lane. Chocolate, strawberry and vanilla sponge stacked high with creamy layers – a pastel dream that turned every slice into a nostalgic spell. Pretty in every way.

She melted into history like a scoop in the sun.

This salty siren reeled in sweet tooths with golden sponge, whipped ganache, and a sticky sea salt caramel swirl. One bite and you were hooked. She came in with the summer tide and slipped out just as quietly.

Some say you can still taste her on an ocean breeze.

A party in every layer, and oh, what a celebration she was. The Birthday Matilda burst onto the scene with fluffy vanilla sponge, whipped buttercream, rainbow sprinkles, and a confetti of white chocolate curls. Sweet nostalgia baked into every bite, she brought joy, laughter, and just a hint of mischief to every table.

Her candles may have burned out, but her sparkle lives on.

Layers of vanilla sponge and biscuit buttercream made this cake a cosy classic – finished with ganache and cookie shards that brought comfort with every bite. Simple. Familiar. Loved by many.

Gone from the counter, but still warm in our hearts.

A single bite of chaos. This cake-pop cutie packed all the Matilda mischief into a handheld hit, dipped in Belgian chocolate and drizzled to delight. She disappeared as fast as she arrived, no time for crumbs.

The ghost of ganache-on-a-stick still lingers.

This one needed its own postcode. An epic, extra-long Matilda slice stacked with sponge and ganache galore – designed for drama and devouring. Loud, legendary, and not for the faint of heart.

She left crumbs everywhere. Including in our dreams.

She came with a kick and left behind whispers of espresso and indulgence. Tia Maria Matilda was our dark-hearted delight – 24 layers of chocolate sponge soaked with coffee liqueur, deep ganache, and devilish dark chocolate fudge.

She’s taking a power nap now, but the buzz lives on.
